The Perfect Weather For Two: A Saturday Food Recipe

The rainy season is here in full force, otherwise called the wet season as well. Sorry single people find a safe place to cuddle yourself, and peep from your cold shelters as we make this weather for two perfect combo.

This recipe is for everyone, but specially made for the weather for two Saturday mornings, like today. It combines classic Nigerian staples with a twist, creating a satisfying and delicious breakfast for two. It’s yam and egg sauce.

You’ll Need:

One medium yam, peeled and cut into cubes

Two tbsp vegetable oil

One medium onion, chopped

Two cloves garlic, minced

One bell pepper (red, yellow, or orange), chopped

Two plum tomatoes, chopped (or 1 cup canned diced tomatoes)

½ tsp dried thyme

Pinch of cayenne pepper (optional)

Salt to taste

Three eggs, beaten

Chopped fresh parsley (for garnish)

How to prepare it

Boil the Yam: In a pot of boiling water, cook the yam cubes for 10-15 minutes, or until tender. Drain and set aside.

Sauté the Vegetables: Heat oil in a frying pan over medium heat. Add the chopped onion and cook until softened. Add the garlic and bell pepper, and cook for another minute.

Simmer the Tomato Sauce: Stir in the chopped tomatoes, thyme, cayenne pepper (if using), and salt. Simmer for 5-7 minutes, or until the sauce thickens slightly.

Mix the the eggs together: Push the tomato sauce to one side of the pan. Add a drizzle of oil and pour in the beaten eggs. Scramble the eggs until cooked through, then stir them together with the tomato sauce.

Serve: Add the cooked yam cubes to the pan and heat through for a minute or two. Plate your delicious yam and egg sauce, and Enjoy

Other important tips:

Don’t have fresh tomatoes? We understand during this period, you can use a can of diced tomatoes for the sauce.

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat gently in a pan over low heat. Say no to wasting food.

Serve with a side of sliced avocado or fried plantains for an extra layer of flavour and texture. If that is accessible.
